Burrito Bowl

Serves between 3-4 people

Ingredients:

1 pack of beef mince

1 tin of kidney beans

mexican seasoning flavour (1-3tbsp depends on how you like it )

1 pack (around 200g) kale

1/2 lemon

1/2 red onion

1/4 red cabbage

2 tomatoes

DRESSING:

1/2 cup tahini

1/4 lemon

drizzle of olive oil

water (to help the dressing become smoother because it will seize up


Method:

1.Preheat the stove top to medium/high

2.Cook mince on the frypan until brown

3.Add kidney beans and mexican seasoning flavour whilst turning down the heat and further cook for another 5 minutes

4.Add the kale and squeeze over the lemon juice and massage with your hands to break down the kale to make it easier to digest

5.Add in your diced red onion, tomato and red cabbage into sections onto of the kale

6.Add the beef mixture into the bowl in a section

7.Shake together the tahini, olive oil and some water until a smooth runny consistency.
