Apple Rhubarb Crumble

Ingredients: FRUITS:
- 3 green apples
- 1 bunch of rhubarb
CRUMBLE:
- 3 tbsp buckinis
- 1/4 cup almond meal
- 1 tbsp of gentle fibre
- 1 tsp maca powder
- sasha of porridge oats
- 2 tbsp + 1 tsp coconut sugar
- 3 tbsp of muesli mix
- 1 tbsp + 1 tsp LSA
- 1 tsp flax seed
- cinnamon (how ever much you want)
- 1 tbsp of rice malt syrup (or any other syrup eg, agave, honey)
- 1 tbsp of coconut oil
Method:
1. Preheat oven to 180 degrees. Preheat stove top and place on a saucepan someway with water
2. Chop up the green apples into chunky cubes followed by cutting the rhubarb into chucks too
3. Add just the rhubarb into the water of the saucepan and only add the apples when the rhubarb is starting to go softer.
4. Add in the chopped apples and further cook the fruits adding some cinnamon into them for extra flavour.. cook until the fruits are a little soft (don't make them go sloppy) .. drain the water from the saucepan and let the fruit to sit
5. Add the crumble ingredients all together in a bowl and mix with hands until fully combined
6. Grease a pan with oil then pour in the apples and rhubarb that you cooked earlier
7. Lastly pour the crumble over the top so all the fruit is covered
8. Place in the oven and cook for 35 minutes or until the top crumble is turning a deep golden colour
9. Serve with some greek yogurt or have plain... this recipe is a perfect warm comfort food
